first steak in a cast iron, came out medium well but was still crazy juiced up

  1. I’ve switched to a cheap IKEA stainless steel pan and had much more success (induction cooktop) with temperature control on steaks than I had with cast iron.

    Crust is good. Maybe you didn’t have it hot enough to develop that crust before the steak was overcooked. Only thing I can think of. Good looking steak though. Maybe try heating the pan longer/higher before it goes in

    Nice sear. The art is getting to lower the high heat (for a nice sear) while preserving a chance for med rare finish. You’ll get there. BTW: I’d eat this steak in a minute
