Let’s make cheesy palenta fries with a creamy mayo dip. And trust me, these are seriously amazing. To make them, start by adding water and palenta into a pot and mixing it until it’s thick. Once it has a gravy- like consistency, add in butter, paprika, garlic powder, salt, and shredded cheese. Whisk that up until it’s smooth and pour it onto a sheet tray. Even it out and toss it in the freezer to firm up. While that’s freezing, let’s make our sauce. Combine mayo, worsture sauce, mustard, ketchup, paprika, garlic powder, salt, and honey. Whisk that up and set it aside. Once your fries are frozen, add them into a pot with oil to cook until they’re crispy. To plate these up, add them onto a plate with your sauce.     🧂 Ingredients:

    1. Cook the polenta:
    • Bring water (and milk, if using) + salt to a boil.
    • Slowly whisk in 1 cup polenta.

    • Stir in butter, garlic powder, paprika, and cheese. Mix until smooth.
    2. Shape and chill:
    • Pour hot mixture into a parchment-lined dish or pan (about 8×8” or anything flat).
    • Spread evenly about 1/2 inch thick.
    • Chill in fridge for at least 30 minutes until firm.
    3. Cut into fries:
    • Once firm, lift and slice into fry shapes (around 3-inch sticks).
    4. Cook:
    • Air Fry: Spray with oil, air fry at 400°F for 10–12 min, flipping halfway.
    • Pan Fry: Heat oil in a pan, fry until golden and crisp on all sides.
    • Oven Option: Bake at 425°F for 20–25 min, flipping once.
    5. Serve hot with dipping sauce — try marinara, ranch, or even salsa from your fridge.
