My whole childhood, I hated meatloaf until I tried it Mexican style. White onion, jalapenos, cilantro. For our meatloaf mixture, combine ground beef, cilantro, jalapenos, onions, breadrumbs, milk, eggs, lava, taco seasoning, and gravel. So, now we got a pan oiled up going with that meatloaf mixture. Just going to compress it into the shape of that pan. Onto the smoker at 275. We’re not using a dish so that way we got five sides hitting smoke instead of one. We got enchilada sauce down. Then going with wakan cheese. We’re going to melt it all together and pour it over the meatloaf. It’s going to be nuts. We pulled this meatloaf off around 145 internal. Let it rest for 15 20 minutes. Sliced into it and oh my lord, it was so juicy. You could see the seasoning in the juice and then we covered it in that wakan cheese. The onions and cilantro helped keep more moisture in that meat as well. This is not your ordinary meatloaf. I personally hate ketchup, hate barbecue sauce.

  1. You don’t hate meatloaf… you hate your mom’s meatloaf lol. Meatloaf is just a big burger in reality, I do mix it up a bit tho I put honey on my meatloaf ( trust it’s good) and also bread crumbs among a few other changes depending on the theme

  2. I also make a taco meatloaf. I use crushed tortilla chips and fresh tortillas ground up in a food processor no bread crumbs. I also make Jalapeno cheese and fried corn cornbread.

  3. Hated meatloaf?! I did t even know people used ketchup in meatloaf until I went to my white friends house my southern grandmother had that joint calling everyone

  4. And serve this with a side if some mexican red rice, a simple salad 🥗 of lettuce tomato cucumber radish & red onion. Definitely a great spin on the IG American-style classic meal of meatloaf, mashed potatoes, & a veggie. Yummy 😋
