Welcome back to PT. We’re making a homemade fresh blackberry cobbler. We’re going to start with 1 cup all-purpose flour, half cup of sugar, 1 teaspoon of baking powder, 1 teaspoon of salt. We’re going to mix that together. Then we’re going to drop in our six tablespoons of cold butter. Cut that into the dry ingredients. Then we’re going to slowly add 1/4 cup of boiling water. Yes, boiling water. Once the dough forms, we’re going to go ahead and set that aside and start with our berries. We’re going to get 2 tablespoons of cornstarch with 1/4 cup of cold water. Whisk that into a slurry. And then add one cup of sugar, 1 tbsp of lemon juice, one teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon. Mix that well. And then we’re going to add the blackberries in. Make sure they’re all coated well. We’re going to drop one tablespoon of butter into a pan. Add our berry mixture. We’re going to cook and stir until this is boiling and thickened. Then we’re going to place that into a 9 by9 dish. We’re going to drop spoonfuls of our dough right on top. Put that into a 400°ree oven for 25 to 30 minutes. Comes out piping hot and delicious.
