Hi all! I just got these at my local farmer's market. I have never seen onions like these before. How do you all enjoy preparing these and do you like them? Thanks for the help!

These grew wild on the farm I grew up on. My dad would eat them fresh. Cut off the roots and dip them in malt vinegar or salted ice water. He’d snack down a whole plate of them while watching Quantum Leap.

Quick sear on the grill. Wrap in paper and steam for 5-10 minutes. Dip in romesco.
