The store I went to yesterday did not stock ANY smoked mussels for some reason, but they did have a good deal on smoked oysters packed in water. This was only a minor setback, however, because I like oysters much more than mussels, so the experiment continues! The recipe is simplified this time; just the oysters in brine from a jar of pickled jalapeños. I left a couple peppers in for flavor and added a few dishes of Crystal hot sauce for zazz.
Going camping tomorrow and plan on having these for lunch on Saturday, so I will update with results!

I’m a little worried about the texture.
Canned oysters (unpickled) can already be kind of rubbery or mealy. Pickling could amp both of those “qualities” up or add a little disintegration to go with.
If you simply google pickled oysters or pickled mussels you can learn about the longstanding history. They are delicious. And especially because OP is eating them within a week (quick pickled style especially since the mollusks are already cooked) they should be fine.
Interesting experiment. My concern is that the level of acidity might change the texture in a less than pleasant way, but I’m curious to see the outcome!
If the texture isn’t improved, try blitzing it into a smoothie!

Really curious about how these turn out! I’ve never had a pickled oyster but I’ve had pickled mussels a couple of times at bougie restaurants and they were DIVINE.

Normally ill shuck and steam them, and then soak them in homemade jalapeño or pickle juice for a few days. You can either eat from the jar……or coat in seasoned cornmeal and flash fry.
