Instructions:
- Beat the eggs with salt and pepper
- Chop the scallion and chili, mix into the eggs
- Break up the Udon noodles and stir them in
- Heat a pan with some oil, pour in the mixture, add cheese on top
- Cook until golden and crispy – about 10 minutes total
