Great way to meal prep a nice hearty carb bomb for the weekend. I use the La Banderita burrito grande tortillas. I mix Daisy sour cream with a little bit of water for better spreadability and some Melinda’s creamy habanero sauce to make a spicy crema. Each burrito gets a dollop of that spread on the inside.
I cook hash browns in the air fryer and chop them up. Bacon goes in a pan and while that’s cooking, I’ll mix some fresh farm eggs with milk and garlic salt. The bacon comes out, I mop up some of the grease with a paper towel and scramble the eggs in the rest.
Each burrito gets eggs, bacon, hash brown, cheese and pico de gallo. Wrap and cut on the diagonal. The one I eat today gets baked for 6-7 minutes to make it ooey-gooey.

Why has no one yet standardized a country-fried steak and eggs breakfast burrito?
I mean full country gravy with sausage, crispy hashed browns, and maybe an english muffin with blackberry jelly cut up and mixed in.
