You are going to love how I prepared this fish tonight. It was so incredibly yummy. In a bowl, combine olive oil with minced garlic, lemon juice, lemon zest, orange juice, orange zest, a pinch of salt, black pepper, and some crushed red pepper for heat. Line the bottom of a baking dish with just a little bit of butter. I’m using orange ruffy here, but you could use any white fish or even salmon. I just season with some salt and pepper. Pour on that sauce. I also had some fresh rosemary, so I threw that in. Cover and bake for about 15 to 20 minutes at 350. Finish with a little fresh parsley. But I mean, doesn’t that look incredible? The fish is so tender and flaky. I serve this tonight with steamed snow peas and steamed rice. Once you plate the fish, then spoon on that yummy sauce. This is a great fish recipe for a really light meal. I love the tanginess from the citrus and it only took like 25 minutes to prepare.
