Looking to eat something tasty but healthy and easy at the same time? Something that’s light but satisfying? … that doesn’t require much cooking or a long time to prepare?

Here it is! So easy: only one item to cook, chop everything else up and dress with lime juice and olive oil or your favorite dressing. In less than 30 minutes (with shelled shrimp) you have a delicious tasty and healthy meal.

Make 2 hearty servings, 4 appetizer servings

Ingredients:
350g shelled and deveined medium or large sized shrimp or 400g unshelled but headless shrimp
1 celery stick
400g cherry tomatoes
1 hass avocado
Salt and pepper to taste
Juice of half a lime, extra virgin olive oil, to taste

You can add more ingredients and substitute others but the idea is to include some protein, healthy fats and several high water content vegetables. Some suggestions include lettuce leaves, sweet onions, a favorite vegetable, your favorite fresh herbs, just remember that if the shrimp are tasty on their own, you don’t want to cover their fresh flavour with too many seasonings.

Procedure:
Shell the shrimp if necessary: I find it easier to peel off the shells when raw rather when cooked. Devein shrimp by running small knife along the back – try to pull it all out in one go. Rinse quickly and place in a small pot with water to cover and bring to a boil or toss them quickly in a frying pan, air fryer, etc. As soon as they all turn pink, turn off the heat and drain. Let the shrimp cool a bit before handling.

While the shrimp cooks/cools down you can place the vegetables in a colander and rinse and cut as follows:
– Slice the celery into thin strips. Place in a medium sized bowl
– Slice each tomato in half. Add the tomatoes to the bowl.
– Peel and cube the avocado. Add to the bowl.

Cut each shrimp into 3-or 4 pieces and add to the bowl with the vegetables.

Add salt, pepper, lime juice and extra virgin olive to taste. Taste and add more if necessary. You may serve it at room temperature or cool (keep in refrigerator for a minimum of 1 hour for it to cool).

For a pretty presentation, serve over lettuce leaves .

few other ingredients that I list below. Super easy. It only requires you to cook the 
shrimp very quickly. That could be done in a number of ways. I’ll list that below as
