Nourishing and light. The perfect combo. Enjoy this easy spring salad with fresh 
veggies and perfectly balanced textures. Let’s get chopping! Dice the bell pepper into bite sized pieces, followed by the courgette, and then finally cut one clove of garlic. 
Heat a large frying pan with a drizzle of olive oil. Once hot, toss in the veggies 
and make sure to stir frequently. Add the garlic and herb seasoning. when ready. Take them out 
of the pan and set aside. Now zest the lemon and slice it into half. In a small bowl, combine a 
generous squeeze of lemon juice, olive oil, and half of the zest. Then season the dressing and set aside. Next, bring water to a boil 
in a medium sized saucepan. Add the couscous. Stir to combine and cover with a lid. Make sure to remove the pan from the 
heat and leave it until all water is absorbed. Fluff up the couscous with a fork and set aside. Let’s make the glaze. In a small bowl, combine the oregano, the other half of the lemon zest and a squeeze of lemon juice. Balance the tang with a drizzle of honey. Next, cut the halloumi into slices. Did you 
know that this cheese originates from the island of Cyprus? It has a long history 
in the eastern Mediterranean region. Heat up a drizzle of olive oil and cook the halloumi until golden brown. Add the honey glaze and turn 
around once more to coat. That looks delicious. Add the dressing to the salad and gently toss. Divide the coziness between bowls. Add the veggies and salad. Top it off with the halloumi. Drizzle with any remaining 
honey glaze from the pan and then sprinkle with the sesame 
seeds as your finishing touch. Get your fork out and enjoy
