So here’s an update on the blueberry ice cream I was trying to make. I ended up just putting the base i churned (that wasn’t firming up) into the freezer for about 20 hours and it come out great with a nice texture. It was also really easy to scoop which I liked.

Some questions I have though is how could I have increased the flavour of the blueberries in the ice cream, I feel like I’m just eating milk ice cream lol. The blueberry flavour didn’t project at all it just gave it colour. Also is skim milk absolutely necessary, cos the milk powder I used in this recipe absolutely overpowered the custard flavour. Like I taste is milk, not in a good way. But overall it wasn’t too bad I just want to improve

Recipe: 473ml Whipping cream (35% milk)
441g Milk
120g Sugar
40g Dextrose
20g Light brown sugar
50g whole milk powder
3 Medium egg yolks
150g of blueberries (made into a jam/syrup)

    Looks great! You could use a concentrated blueberry extract, dried powder or pie filling to add more flavor. I often find the flavor lacking when using fresh fruit, so I’ll boil the fruit with extra sugar and add flavoring if needed. I always use full fat milk and heavy cream when making a custard based ice cream. Maybe try a different recipe for your base.

    Looks delicious! I like the suggestions above, or you could make a blueberry swirl! Drizzle (additional) syrup in during churning, or layer in jam with the churned ice cream into your container to further freeze.

    Blueberries are notoriously difficult to retain the flavor of. I’d try using the smallest ones you can find (more skin = more flavor) and make syrup with that. You might also experiment with adding a very small amount of citrus juice or other acid to see if it makes the flavor pop.

  5. i find wild blueberries actually have a bit more of that flavour you’re after, so if you can get your hands on those, you’ll get a lot more flavour and colour too 🙂 !
