  1. Yellow is Lemon Drop, Orange is Peach Starkist, Reds are various, from Thai to Buena Mulata to Chile de arbol to Maria Nagy’s Transylvanian. They’re de-stemmed, chopped, and put in a 3.5% salt brine with some garlic. In a couple weeks it’ll be blended into hot sauce!
