470 ml / 15.89 oz / 2 cups water.

7g / 2 ¼ teaspoons dry yeast.

You can dissolve the yeast by shaking the bowl.

10g / 1.75 teaspoons salt.

10 ml / 2 teaspoons olive oil.

560g / 19.75 oz / 4 ⅔ cups bread flour (protein value 12%).

Mix all the ingredients.

The dough should be very soft.

Focaccia is called the little brother of pizza because it has fewer ingredients.

Adding olive oil to the focaccia dough makes the dough more moist and soft.

Cover the dough and let it rest at room temperature for 30 minutes.

Pour 1 tbsp of olive oil.

Stretch and fold the dough.

Definitely do not add flour because the dough is soft.

Cover the dough and let it rest in the fridge for 12 hours.

What we did: Mixed all the ingredients and rested for 30 minutes. Folded the dough. That’s all.

The dough will have an elastic consistency when it comes out of the fridge.

Pour 1 tbsp olive oil.

If these bubbles appear, the dough is well fermented.

Spread the oil on the pan with your hand.

It will be easy to transfer the dough to the pan with your oiled hand.

Cover the dough and let it rest for 1 hour.
