Family from Italy came over to visit and brought me a piece of Parmigiano Reggiano aged 30 months. Personally I prefer it when it hasn't been aged so long because it tends to be a bit salty, 12 months is the sweet spot for me. Ate a bit of it then today I had some spare coals from smoking some chicken and decided to try and smoke the cheese because why not… personally I like it but wife says it's even saltier now. Anyhow, I think I'm going to loose my citizenship over this.
