I actually think I got my cast iron to hot on this one, absolutely smoked out the house and the fat cap caught on fire while searing it, all is well that ends well though…

    🔥🔥 The reverse sear is next level, I could never get anywhere close to this using strictly pan searing. Not that it’s impossible, I’m just terrible at it
