I make soup and pickle any produce that is building up. What do you do to to prepare or preserve your produce so nothing goes to waste?

After gardening for 4.years and getting bigger and bigger yields, I am actually struggling with this. I like to garden, I don’t like to cook. I end up giving away 90% of my product

I’m so envious lol. I have such a little yield, I hope I have this problem someday.

Nice job! I’ve been recently oven ‘sun’ drying the cherry tomatoes as we can only eat so many in salads or as is. Plus salsa is a must here if we’re able.

While I try my best to eat all the produce, at the very least it goes back into the compost for next year’s nutrition.

So true! I also search for people who miss having a garden of their own and give them stuff.

    The soup looks yummy!

I’m prepared for canning, dehydrating, and freezing.

Amazing!!! How do you pickle your lemon cukes? I need to start, so many lemon cucumbers! Definitely my most prolific!

Is pic 4 beets? Did you dehydrate them? This looks like a great harvest!

One thing I started doing with my cherry tomatoes is put them in a blender. Then I run them through a food mill to remove seeds and skin. Pulp comes through. I add bottled lemon juice and dehydrate. Then I crunch it up into sheets and powder. I use it to thicken my sauces, just like tomato paste.
