Welcome back to Bear’s Recipes! This is the final video in our Reuben Sandwich series, where we’ve made everything from scratch—from the corned beef to the marbled rye bread. Today, we’re making the simplest, most delicious Russian dressing—the perfect finishing touch for our homemade Reuben!

Ingredients

1 egg yolk

1 tsp salt

1/2 tsp black pepper

1 garlic clove

1/3 of a red onion

1/3 cup ketchup

2 tbsp sriracha

Handful of pickles

1 cup (270g) neutral oil

Instructions

Step 1: Blend the Base

1. In a food processor, combine the egg yolk, salt, pepper, garlic, red onion, ketchup, sriracha, and pickles.

2. Blend until just combined.

Step 2: Emulsify the Dressing

1. Measure out 1 cup (270g) of neutral oil and set aside.

2. Slowly drizzle the oil into the food processor while blending, allowing the mixture to emulsify into a thick, creamy dressing.

Step 3: Assemble the Reuben!

Now it’s time to put everything together:

1. Toast your marbled rye bread to soften the cheese.

2. Stack on the homemade corned beef and sauerkraut.

3. Drizzle on plenty of Russian dressing.

4. Top with the second slice of bread, and there you go!

And that’s it—a fully homemade Reuben sandwich, from the bread to the beef to the sauce! Thanks for following along in this series.
