It looks good but I bet the eggs taste just like the meat. I enjoy more flavor separation (especially with breakfast). If that was rolled into a burrito every bite would taste the same.

I’d eat it, but yeah those eggs do look overcooked

So yes I would crush that with some hot sauce.
But yeah the eggs are too well done, I would have done them much gentler, added pepper and chives/Scallions.
