My second attempt at beef ribs, much better than take #1 thanks to advice from people online. I did a 12 hour dry brine, 6 hour post-oak smoke (280F) until 203F, 3 hour rest (cooler). Wolfed it down with butternut pie, mac n cheese, and creamed spinach.

    That looks like wagyu. Revolt against the king and become an American. That’s what we did like 250 years ago. I heard he put a 3% tax on all Berkshire pork and the founding fathers threw the hogs into the ocean. Wow, they were more disciplined than me, I would have taken the hogs.
