My second attempt at beef ribs, much better than take #1 thanks to advice from people online. I did a 12 hour dry brine, 6 hour post-oak smoke (280F) until 203F, 3 hour rest (cooler). Wolfed it down with butternut pie, mac n cheese, and creamed spinach.
