Ingredients Used:
2 chicken breast, halved
Salt
Pepper
1 cup all purpose flour
Paprika
Onion powder
Garlic powder
1 cup plain breadcrumbs
1/2 cup Parmesan cheese, for the breadcrumbs
Italian seasoning
2 eggs, scrambled
Marinara
Mozzarella, for topping
Parmesan, for topping
Pesto
Spaghetti
Extra marinara, for topping

Today we’re making this delicious pesto chicken parmesan. We’re going to first slice two chicken breasts in half to make four thin pieces. Then season both sides with salt and black pepper. Now just set those aside. Then we can begin making our breading station. To a shallow dish, we’re going to pour in 1 cup of allpurpose flour. Then season our flour with paprika, onion powder, garlic powder, and black pepper. Now, just give that a good whisk. To another plate, we’re going to add in one cup of plain breadrumbs. Sprinkle in about half a cup of Parmesan cheese. Then, season with Italian seasoning, paprika, onion powder, garlic powder, black pepper, and salt. Give that a good whisk as well. Then for our last plate, we’re just going to whisk in two eggs. After scrambling our eggs, lightly coat the bottom of a pan over medium high heat with oil. Once our oil heats up, we’re going to dredge our chicken in flour. Shake off the excess. Then do the same with the eggs and press it into our breadcrumbs. Carefully lay the chicken in our heated pan. and allow it to fry for 3 to four minutes on each side or until golden and crispy. Once our chicken cutlets are done, we can preheat our ovens to 400°. To a sheet pan or baking dish, we’re going to spread on a bit of marinara. Then add our chicken cutlets on top. Next, just spoon on some pesto. Then, we’re going to spoon a little more marinara right on top. We’re now going to top with some mozzarella cheese and a sprinkle of parmesan. We’re now going to bake our chicken at 400° for 10 to 15 minutes or until the cheese becomes bubbly and golden brown. In the meantime, we’re going to bring a pot of water to a boil. We’re then going to salt our water, then boil a 16 oz box of spaghetti for 10 minutes. Now our pesto chicken parmesan is done and ready to enjoy.
