
Made some nigiri for dinner tn. Cured a Costco farmed salmon a few days ago, cut into bars and wrapped with seran for a 2 day freeze and here we are!
This was the back/near tail portion of the salmon, saving the better quality sections for a larger sushi/nigiri dinner night.

Nice my dude! Great cut on the salmon, and good amount of rice that can hold it.
You could enhance them with some simplified toppings to get different favor profiles
Ex)
brush it with ponzu,
Squeeze some drops of lemon and add salt
Brushed soy with sesame seeds
A bit of sesame oil and some Cajun seasoning torched
A shisho leaf with some scallions
And my favorite just a dust of yuzu kosho.
