Usually on Sundays I cook Sri Lankan food. Any immigrant would know the closest to home you could get is through good food (sobs in a corner)

Today’s food: Coconut roti, Chicken breast curry cooked in coconut milk, Dhal and Spinach curry cooked in coconut milk.

Sri Lankan food is relatively healthy — we eat A LOT of veggies, don’t use ghee or butter. One thing we do overdo though is Coconut. You’ll find coconut in almost anything.

However, I’ve managed to find low calorie alternatives and use coconut milk very sparingly. Sri Lankans overseas mostly use coconut milk powder from Sri Lanka (you can find 1KG packs from Asian groceries) as opposed to the coconut milk cans. This is honestly the trick to making it low calorie.
