my boyfriend said this is one of the best dishes I’ve made so far this year So the marinade starts off with my Moroccan preserved lemons I’ll just be using the rind for this Then some shallots and garlic Fresno chili a whole bunch of cilantro stems haresa then some spices like cumin smoked paprika and Aleppo pepper Then some olive oil Now give this a good blend And I set a little bit of the marinade aside to brush onto the chicken while it’s grilling Here I’m just removing the back of my pasture-raised chicken then splitting it in half Then season this up with salt and freshly cracked black pepper Then coat both sides with the marinade And I’ll let this sit in the fridge for a day Then let it hang out at room temp for about 45 minutes before grilling it up I’m serving this chicken over a really simple lemon garlic yogurt then finishing it with my chili and cilantro oil and some Aleppo pepper

Marinade
2 preserved lemons, rinsed & rind only
1 large shallot
4 garlic cloves
1 fresno chili
1 bunch cilantro stems
3 tb harissa paste
1 tb ground cumin
2 tsp ground coriander
2 tsp smoked paprika
1 tb sicilian oregano
1 tb aleppo pepper
1/3 c olive oil
1 (3lb) pasture-raised chicken, split in half
kosher salt
freshly cracked black pepper
Lemon Yogurt
1/2 c greek yogurt
zest of 1 lemon
1 garlic clove, grated
1 tb olive oil
kosher salt, to taste
To Finish
charred lemon
aleppo pepper
chili oil
cilantro oil
