Recipe: 4 Servings
1. Salad
-10-12 ounces of Mixed Greens
– 1 English Cucumber
– 2 Roma Tomatoes
– 1/2 Red Onion
– 3 tbs Olives
2. Dressing
– 1/2 cup Plain Greek Yogurt
-1/2 cup Olive Oil
– 2 tbs lemon juice
– 2 tbs Apple Cider Vinegar
– 2 cloves of garlic
– Equal Parts: Dill Weed, Salt, Sugar, Oregano
3. Roasted Chickpeas
– 15 oz cooked Chickpeas
– 1 tbs Olive Oil
– Equal Parts: Smoked Paprika, Black Pepper, Salt, Garlic, Cumin
Today we’re going to make a healthy Greek salad with roasted chickpeas and feta. This salad is packed with flavor, incredibly delicious, and can come together in less than 30 minutes. Let’s start with the dressing. Let’s bring together a half2 cup of Greek yogurt, 1/2 cup of olive oil, 2 tbsp of apple cider vinegar and lemon juice, some seasonings, and two cloves of garlic. Now, we’re going to combine each ingredient one by one in a large bowl, making sure we slowly stir and emulsify this mixture. Once it has all come together, it is ready to go, but my recommendation is that you let it sit for at least 2 hours so that the flavors are enhanced. Now, let’s make our roasted chickpeas. Take a can of chickpeas, rinse them off, and dry them thoroughly. The important thing to note is that you want your chickpeas as dry as possible. Next, take a tablespoon of olive oil and coat your chickpeas evenly. Then, add your seasoning blend and ensure that every chickpea is coated evenly. Add them to your air fryer and cook them for 20 minutes on 375. Once the chickpeas are done, add them to a small bowl and set them aside. [Music] Now it’s time to build our salad. Let’s start by chopping one large English cucumber, [Music] two large tomatoes, [Music] one half red onion, three tablespoons worth of olives. [Music] In a large bowl, add 10 to 12 oz of mixed greens. To that, add your cucumbers, tomatoes, onions, olives, roasted chickpeas, and 6 to 8 oz of feta. The finishing touch is our dressing. Drizzle as little or as much as you’d like. I used around a half a cup for this size serving. [Music] Now it’s time to plate and enjoy. [Music]
