So, I had to bake a hundred cookies for an event last week and it was almost a disaster. So, let me tell you about it. I call these rainbow cookie cookies. They’re inspired by those three layer rainbow cookie bars you find at like every Italian deli, but I kind of combine that with a regular chocolate chip cookie, so they are a lot easier to make, but still evoke the original flavor. This recipe is on page 243 of my new cookbook, Italian-ish. It starts with an almond cookie that then you divide into three colors, mush them together, and bake. I then brush melted chocolate on the bottom of the cookies and then sprinkle them with freeze-dried raspberries. Okay, but then the disaster. I had to bring these to New York City for a Pride event and it was like 99 degrees out. I was so afraid the chocolate was going to melt. They were all going to smush together. But I packed them with ice. I got on the subway and thankfully they made it. They were big hit. Crisis averted.
