You’ll nee:

For the tomato-basil spread:
-2 dozen baby tomatoes
-Olive oil
-4 garlic cloves, minced
-12 fresh basil leaves
-Salt and pepper to taste

For the arugula topping:
-A handful of arugula
-1 tsp olive oil
-Pinch of sumac

For the sandwich:
-Focaccia bread, lightly toasted
-Tomato-basil spread
-Mayonnaise (just a little)
-Slices of mortadella
-Slices of prosciutto
-Fresh burrata cheese

Tomato Spread:
In a pan over medium-high heat, warm a splash of olive oil. Add the baby tomatoes and cook until their skins begin to burst. Gently mash them in the pan. Stir in the minced garlic, basil leaves, salt, and pepper. Let it simmer briefly, then remove from heat. Once it’s cooled slightly, chop or mash the mixture to your desired texture and let it come to room temperature.

Prepare the arugula topping:
In a bowl, toss the arugula with a teaspoon of olive oil and a pinch of sumac.

Assemble the sandwich:
Lightly toast your focaccia. Spread a layer of the tomato-basil mixture on the bottom half, followed by a light smear of mayo. Layer on slices of mortadella and prosciutto, top with the dressed arugula, and tear over some creamy burrata. Add the top piece of focaccia, press down gently, cut in half, and enjoy immediately.

It’s raining herbs. Hallelujah. Look at these Jurassic Parksized basil leaves. We spare no expense. We’re going to roll our basil like a little cigar. And then we just chop. Chop chop chop chop chop chop. Basil complete. Now we’re going to mince up about four garlic cloves. Vampire poison complete. Let’s cook up some tomatoes. We’re going to do mediumigh heat. A little bit of olive oil. Then we’re going to put in about two dozen cherry tomatoes or baby tomatoes or whatever you want to call them. Yeah. And now you just let them cook. Let them cook. Woo! Woo! This is a great way to use cherry tomatoes if you grow them in your garden or if you just bought them and you don’t know what to do with them. After about 3 minutes, you’re going to notice that the tomatoes are going to start splitting. That’s okay. That’s what we want. You can help them along by giving little squishies.
