Bulgur Wheat Chickpea Salad is a mix of bulgur wheat, chickpea, nuts and cranberries and fresh veg combine to create this wholesome tabbouleh-style salad. Bulgur is very easy to prepare and makes a great alternative to rice and pasta. Serve it as a main, side dish or make it ahead for a filling and healthy packed lunch.

Ingredients(Serves: 2 – 3)

For the salad:

1 cup cracked bulgur wheat (~220g)
2 garlic cloves, chopped
2 tbsp olive oil or vegetable oil
1+1/4 cup water or vegetable stock
1.5 cup Cooked chickpea
1/4 yellow, red, orange pepper, finely chopped
1/2 English cucumber – finely cubed
1/2 cup roasted salted cashews, coarsely chopped
1/2 cup dried craneberries (or use raisins)
Handful fresh coriander leaves, finely chopped
salt and freshly ground black pepper, to taste

For the dressing:

2 tbsp extra virgin olive oil
1 freshly squeezed lemon
1 tsp chilli flakes
1 tbsp maple syrup or honey
Salt to taste
Pepper to taste
