Tom Yum Veggies, beans, and Chicken, on Soba Noodles

    Nice easy batch of lunches! Mostly cans and frozen veg, took less than 45 min including cleanup. This makes a HEARTY 5 servings so if you’re a lighter eater you could probably cut it to 80% of this

    **Noodles**

    * 350g soba noodles: cook until almost done, then drain in colander and rinse in cold water (slightly undercooked = not complete mush after a few days in the fridge)

    **The Rest**

    * Heat a large pot on medium heat with a couple Tbsp veggie oil
    * Add 1/2 head of cauliflower, chopped, and 1 bell pepper, sliced
    * After the veggies brown a little, stir in 1-2 tsp fresh ginger, 2-3 cloves fresh garlic, and 1 jalapeno (optional), all minced
    * Saute until fragrant (30-60 sec) then add one can chopped tomatoes, one can coconut milk, and one can black eyed peas (all in that regular size, ~14 oz/400g). Fill the empty coconut milk can with water, swirl it around a bit then add water to the pot, too
    * Return to a boil/strong simmer, then add 1.5 lbs/600g boneless/skinless chicken chopped into bite size pieces
    * Cook at a low boil for 5-10 min, until the chicken is cooked through
    * Add tom yum paste and salt to taste, and stir to dissolve in
    * Turn off heat then add 20 oz/600g frozen green beans

    With the jar of tom yum paste I used, it was about 6oz/180g/0.5c. I don’t know if most are similar concentration, but it should about 5x what they call one serving. You can make it stronger or weaker to taste.
