Ingredients

For the Pasta:
• 250g rigatoni or any pasta of your choice
• 1 teaspoon salt (for boiling)

For the Meat Sauce:
• 2 tablespoons olive oil
• 1 medium onion, finely chopped
• 2-3 garlic cloves, minced
• 300g ground beef or lamb
• 1 teaspoon paprika
• 1 teaspoon cumin
• 1 teaspoon red chili flakes (adjust to taste)
• Salt and pepper to taste
• 2 tablespoons tomato paste
• ½ cup water

For the Yogurt Sauce:
• 1 cup plain yogurt
• 1 garlic clove, finely minced
• 1 tablespoon lemon juice
• Salt to taste

For Garnishing:
• 1 small tomato, finely chopped
• 2 tablespoons fresh parsley or mint, chopped
• 1 teaspoon chili oil (optional)
• Sprinkle of sumac or paprika

Instructions
1. Cook the Pasta:
• Boil the pasta in salted water according to the package instructions. Drain and set aside.
2. Prepare the Meat Sauce:
• Heat olive oil in a pan over medium heat. Add chopped onions and sauté until translucent.
• Add garlic and cook for another 30 seconds.
• Stir in the ground meat, breaking it apart as it cooks. Cook until browned.
• Add paprika, cumin, chili flakes, salt, and pepper. Mix well.
• Stir in tomato paste and cook for 1-2 minutes.
• Add water and let it simmer until the sauce thickens.
3. Make the Yogurt Sauce:
• In a bowl, whisk together yogurt, minced garlic, lemon juice, and a pinch of salt until smooth.
4. Assemble the Dish:
• Place the cooked pasta in a serving dish.
• Top with the meat sauce.
• Drizzle the yogurt sauce generously over the meat.
5. Garnish and Serve:
• Sprinkle chopped tomatoes, parsley, and chili oil (if using) on top.
• Add a sprinkle of sumac or paprika for extra flavor.
