This hearty Austrian potato goulash is a nostalgic family recipe from my grandmother’s kitchen in Salzburg. It’s bold with paprika, comforting, and surprisingly affordable: around $1.75 / €1.60 per serving. Perfect for meal prep or feeding a group on a tight budget. Recipe in the comments.

**Ingredients (feeds 6):**
* 3.3 lbs / 1.5 kg potatoes
* 3 onions
* 4 cloves garlic
* 3 tbsp sweet paprika powder
* 1 tbsp salt
* ~4 cups vegetable broth
* 10 Frankfurter or Vienna sausages
* 1 tbsp butter
**Instructions:**
1. Melt butter in a large pot and sauté chopped onions and garlic until translucent.
2. Add diced potatoes, stir for a few minutes, then season with paprika and salt.
3. Pour in vegetable broth so the potatoes are just covered. Bring to a boil, reduce heat, and simmer for about an hour.
4. Slice sausages and add them for the last 5 minutes of cooking.
5. Serve hot with crusty bread. Garnish with parsley or a spoon of sour cream if you like.
Living in Austria and eating cheap is kinda tough
