Vegetarian Recipes Moroccan Vegetable Tagine
Ingredients (Serves 6–8)
• ¼ cup olive oil
• 2 yellow onions, chopped
• 8–10 garlic cloves, minced
• 2 carrots, chopped
• 2 russet potatoes, cubed
• 1 sweet potato, cubed
• 2 cups canned tomatoes
• ½ cup chopped dried apricots
• 1 quart vegetable broth
• 2 cups cooked chickpeas
• 1 lemon, juiced
• Handful fresh parsley, chopped
Spices:
• 1 Tbsp harissa spice blend (or 1½ tsp Ras El hanout)
• 1 tsp ground coriander
• 1 tsp ground cinnamon
• ½ tsp ground turmeric
• Salt, to taste
🔥 Instructions
1. Sauté aromatics: Heat olive oil in a large pot. Add onions and cook for 5 minutes. Stir in garlic and chopped vegetables.
2. Add spices: Sprinkle in salt and all spices. Toss to coat.
3. Simmer stew: Add tomatoes, apricots, and broth. Bring to a boil, then reduce heat and cover. Simmer for 25 minutes until veggies are tender.
4. Finish: Stir in chickpeas and cook for 5 more minutes. Add lemon juice and parsley.
5. Serve: Drizzle with olive oil and enjoy with couscous, rice, or crusty bread.
