How’d I do? 2nd time using. First time plate ribs.

  2. Temp looks brilliant, but bark is pretty light. 225 is kinda low for beef ribs, so you’re going to be losing a bit of flavor and texture on that bark. If you’re going to start low, like at 225, then bump it up after about 90 minutes after that smoke has penetrated the meat. I’ve seen people go to 300, but I like i at 275, cause it’s a bit safer.

    Overall, I would wager it at an 8/10, incredible for your first time! And with the right sauce, it’ll be near indistinguishable from a perfect bark in flavor. Would definitely pay for these
