  2. Theirs has been edited to make the red pop. All you need is a sugar glaze on your strawberries and it will photograph amazingly.

    Looks tasty! We eat first with our eyes and I would happily devour yours. Probably the only difference between is practice. I think the goal photo probably has some filtering but also the cake was trimmed, exposing the redder interior. It probably had some extra food dye in it too. Trimming also levels the cake and allows for those super sharp edges.

    Be proud of it. Many people wouldn’t have even tried. It doesn’t stand up to the photo because you aren’t a professional photographer, but you did a good job making it.

    The cake your copying was probably using gel dye. Which makes the colour stay. They would have made a heap of flat rounds. They made a thick icing and piped rosettes around the outside and just filled in the middle. Then lastly, they’ve put a colour filter on the pic.

    Your is a nice cake, I wouldn’t put all those strawberries stacked in the middle and serve with them on the side

    Red velvet is notoriously hard to make vibrant red. Like It requires a ridiculous amount of food dye and some photo editing to look like the sample pic.

    Honestly I think the main differences are that your cake layers aren’t cut flat on top/edges and you didn’t pipe your middle layer icing into puffs. Everything else about that first pic is about editing!

    Congrats on your first bake! I’ve never seen a real cake that bright red and I don’t think I’d eat one if the option was available. Red velvet, which has red food coloring added, isn’t even this bright in color, even if quite red toned often.

    *yes the first photo is either AI or photoshopped. Not arguing that. Just giving advice for the future. I work in a bakery as a manager, but started as a cake decorator*

    Most commercial red velvet cake has a TON of dye. True red velvet cake does not, it’s classically a buttermilk cake with a small amount of cocoa and the chemical reaction makes a brick red color. If you’re wanting to achieve the color, use white cake mix and add gel dye to the batter, and bake at a lower temp like around 315 degrees Fahrenheit which will take longer but won’t brown it as much.

    For the frosting, use a large round piping tip to make little round beads (look up bead border piping to see the technique) and you’ll pipe from outside in before adding another layer. The top is the same.

    Use a cake level and torte the layers (thin even layers) save some scraps for the crumbles at the top. Arrange berries, I use a little corn syrup to make it look glazed but it’s really not necessary. The additional leaves can be achieved by adding food safe flower greenery or herbs, just be cautious about adding anything too savory. I personally like adding rosemary sprigs on top and it doesn’t release too much of the scent unless you rip off leaves or shove it in haha.

    You’ll be able to get the cake to look really close to the original AI photo with these tips. I hope it helps! Your cake looks ✨AMAZING✨for it being your first! My first few cakes looked awful haha

    The first photo is definitely edited. However, I would recommend thinner layers or splitting the cakes if you try again. Make sure your cakes are cold before you try to split, and use a thin serrated knife. Slice the strawberries in the layers very thin and leave a 1/2 inch piped ring or large dots (like the original) of cream cheese filling around the edge for a clean look.
