(Could be made with $1 instant bag)
2 cups Almost expired milk
Already opened can of peas $1
Half bag shredded white cheese
Limp whole carrots – boiled and cut $1
Opened bag of frozen kale
Did it overflow? Yes… a little haha.

Made entirely out of leftovers:
Leftover shredded chicken (cooked in an instapot days ago, shreds very easy if made in an instapot.)
Leftover mashed potatoes (Could be made with $1 instant bag) Prepare and spread on top before cooking. (You could also just use a can of crescent rolls.)
2 cups almost expired milk – thickened with a little flour, butter and the cheese.
Half bag shredded white cheese
Already opened can of peas $1
Limp whole carrots – boiled and cut into bits $1
Opened bag of frozen kale – one cup? Two cups? You can’t taste it, it’s just for color and nutrition. You can leave it out. Or substitute with spinach.

Cook and add all veggies to a bowl, put aside.
Add milk, chicken, cheese and a little butter to a pot. Bring to a hot temp (do not boil!!!) When cheese is melted, sprinkle flour in and stir till seems thicker.
Pour milk/chicken sauce stuff into the veggie mixing bowl. Add salt and pepper (and adobo?) to taste.
Pour that veggie/sauce/chicken mixture into a dish. Spread mashed potatoes on top. (Or can of crescent rolls.)
Cook until bubbling in 350 oven. For additional color, put oven on broil to color the tops of the potatoes.
All food inside is pre-cooked so you shouldn’t be too worried about that.

Oooh. My mom has an absolutely killer chicken pot pie recipe that I would like to make, but I love the idea of potatoes for the crust..

Absolutely love these kinds of dishes. In Quebec Canada, a very common and popular dish is “Pate Chinois” (Chinese Pate) which is basically a Cottage Pie but with just ground beef/pork/veal/whatever, corn and mashed potatoes.
But under the mashed potatoes, you can basically put whatever. Your concept seems delicious and I’d devour it during the colder months.
