In my family we usually have a glorious cheat day every Saturday, fast on Sunday and go back to keto from Monday to Friday. I always make this dish on Monday. It makes us looking forward to going back to keto days.

    This Portuguese inspired japanese dish is a izakaya(Japanese tavern) favorite. Juicy chicken thigh meats coated in a delicate egg batter that soaks up a teriyaki kinda tangy sweet dressing and topped with a creamy mayonnaise rich tartar sauce. It’s fusion cuisine at it’s finest.

    It tastes amazing over a bed of shredded lettuce, I personally love to add a handful of arugula, its slight bitterness and nuttiness match perfectly with the tangy sweet chicken nanban, creates vibrant layers of flavors.

    Makes 2 servings:

    * Tartar sauce:

    1/2 small cucumber , chopped

    2 tbsp chopped onions

    A pinch of salt

    2 hard-boiled eggs ( roughly mash with a fork)

    4 tbsp mayonnaise( preferably Kewpie)

    1 tbsp lemon juice ( 2 tbsp if use regular mayo)

    1-2 tsp sweetener ( I use erythritol)

    A drizzle of keto ketchup and yellow mustard

    1 pinch salt and pepper

    Mix the chopped cucumber and onions with a pinch of salt, let it sit for a few minutes and then squeeze out the excessive liquid.

    Mix with the rest of the ingredients to make a chunky tartar sauce. Set aside .

    * Nanban Sauce:

    2 tbsp sweetener

    2 tbsp soy sauce

    2 tbsp rice vinegar – or white wine vinegar

    A pinch of ginger powder

    A pinch of xanthan gum ( optional)

    * Chicken:

    1 lb boneless skin on chicken thigh

    1 pinch salt and pepper

    1 medium egg

    4 tbsp almond flour

    cooking oil

    Shredded greens for serving

    A handful of arugula for serving ( optional)

    1. Mix the nanban sauce ingredients in a cup, set a side.

    2.Cut the chicken thighs into 2 inches big chunks, put in a big bowl, mix with salt and pepper and 1 egg, mix in almond flour , until every piece of chicken is coated with a light egg batter.

    3. Fry the chicken pieces with 1- 2 tbsp oil in the frying pan with medium heat until golden brown on both sides.

    4. Pour in the nanban sauce, turn up the heat, stir and flip the chicken constantly until the sauce reduces and thickens and all the chicken pieces are fully glazed.

    5. Put the chicken pieces over the shredded greens and generously top it with the tartar sauce .

    This looks amazing! I am going to have to try this out! Thanks for sharing! You do the same as we do. Have a nice (Not to crazy) cheat meal on the weekend and continue all week with keto! Makes the change much easier and something to look forward to!
