How to make Bruschetta with Tomatoes
Ingredients:
-slices of bread (choose the thickness you prefer, baguette works perfectly for this)
-1 clove of garlic
-tomatoes cut up in little pieces (I love cherry tomatoes, but any tomato will work)
-extra virgin olive oil
-fresh basil
-salt & pepper to taste, dry oregano (optional)
Directions:
-toast the bread in the oven at 400F for 7-8 minutes (every oven is different, so keep an eye on it to avoid that the bread burns)
-in the meantime, prepare the tomato condiment for your bruschetta – cut up the tomatoes in little pieces, add 1-2 tablespoons of extra virgin olive oil, a quick shake of salt and pepper and fresh basil (in my area, we don’t add chopped up garlic to the tomatoes, instead we rub it on the bread only – see next step)
-lightly rub the toasted bread with a halved clove while it’s still warm
-add the marinated tomato mixture onto each slice of toasted bread
-garnish with extra fresh basil if you have it (optional step)
-serve immediately, to avoid that the bread gets soggy
