🍚 Roz Bel Laban (Egyptian Rice Pudding)
This isn’t just any rice pudding — this is Roz Bel Laban, the Egyptian classic that warms the heart. This dish is a nostalgic comfort food across the Middle East.
One-Pot Traditional Comfort Dessert_
📝Ingredients:
¾ cup short-grain white rice (about 4 heaped tbsp, rinsed well)
¾ cup water
Pinch of salt
2 cups whole milk (or mix of milk + coconut/cream/oat etc. for flavor)
2 tbsp sugar (adjust to taste)
½ tsp ground cinnamon or stick
⅛ tsp ground cardamom (opt.)
½ tsp orange blossom water or rose water (optional but adds an authentic touch)
1 tsp cornstarch + 1 tbsp cold milk (opt. only if you like it extra thick)
🍳 Method:
1. Simmer Rice:
In a pot, add ¾ cup water and a pinch of salt, bring to a boil.
Add the rinsed rice, reduce heat, and cover to simmer on low for 7–8 minutes — until water is almost absorbed and the rice is soft.
2. Add Milk & Simmer Again:
Pour in 2 cups of milk, stir well, and bring to a gentle simmer.
Keep stirring often to prevent sticking. Let it cook on low heat for 25–30 minutes or until the mixture thickens and rice is very soft.
3. Sweeten & Spice:
Add the sugar, cinnamon, and blossom water (if using). Stir gently.
If you want a thicker, creamier pudding, stir in the cornstarch-milk mix and let it cook for a few more minutes until you reach your desired consistency.

Chill before serving, or serve warm if you’re craving comfort.
Top with golden raisins, chopped pistachios, almonds, or even a dusting of cinnamon.

Soaking the rice for 15 minutes before cooking helps it cook faster and become extra soft.
