1 block (8 oz) feta cheese (Greek feta in brine is best)

2 cups cherry or grape tomatoes

1/4 cup olive oil

2–3 garlic cloves, minced

1/2 tsp red pepper flakes (optional, for heat)

Salt and black pepper, to taste

8 oz pasta (short shapes like penne, rotini, or farfalle)

Fresh basil (for garnish)

🔥 Instructions:
Preheat oven to 400°F (200°C).

Assemble the bake:

In a baking dish, add cherry tomatoes, garlic, olive oil, salt, pepper, and red pepper flakes.

Mix to coat evenly, then place the block of feta right in the center.

Drizzle a little extra olive oil over the cheese.

Bake for 30–35 minutes, until the tomatoes burst and the feta is golden and melty.

Meanwhile, boil the pasta according to the package instructions. Reserve 1/2 cup of pasta water, then drain.

Mash and mix:

Use a fork to mash the warm feta and tomatoes into a creamy sauce right in the baking dish.

Add the drained pasta and toss to coat. Add a splash of pasta water if you want it creamier.

Top with fresh basil and serve immediately!
