Let’s make a Chipotle chicken bowl from scratch with juicy grilled chicken, homemade fresh tomato salsa, creamy guacamole, black beans, cilantro rice, and all your favorite toppings. This is so easy, delicious, and better than takeout. Everyone can do it at home. Let’s get started. Prepare chipotle sauce for marinade the chicken. In a bowl or plate, add one or two chipotle peppers from a can, one tablespoon adobo sauce from the same can. Two tablespoons of olive oil. One tspoon lime juice or apple cider vinegar. A half teaspoon ground cumin. [Music] A half teaspoon dried oregano. One teaspoon garlic powder or two cloves fresh garlic. A half teaspoon smoked paprika for extra smokiness. Optional. A half teaspoon salt. Adjust to taste. Mix them. Mash the chipotle pepper with a spoon. [Music] You can use a blender or food processor. Where are you watching from? Share it in the comments. I’d love to hear. Add a half teaspoon brown sugar or honey to balance the heat. Optional. Blend all ingredients together into a smooth paste. [Music] One pound of chicken breast or tight. Coat the chicken thoroughly with the marinade. Add a/4 teaspoon black pepper. Poke the chicken with a fork. This helps the seasoning soak in deeper and adds more flavor to every bite. [Music] [Music] Let it marinate 30 minutes to 1 hour for a quick marinade up to 12 hours overnight for deeper flavor. [Music] Meanwhile, make a guacamole. The safe internal temperature for chicken is 165 F or 70 for C. Let it read for a few minutes before slicing. [Music] Slice and cut the grilled chicken into bite-sized pieces. [Music] Chicken is juicy and tender. For cilantro lime rice, 1 cup cooked rice white or brown. 1 tspoon chopped fresh cilantro. 1 teaspoon lime juice. 1 to teaspoon olive oil. Salt to taste. Mix all ingredients into warm rice and fluff with a fork. [Music] Assemble your bowl. Start with a base of cilantro lime rice. Add sliced chipotle chicken. [Music] Pile on your favorite toppings.
