❂ Ingredients:

1 Whole Branzino, filleted into 2 halves
Anchovies, finely chopped
Fresh Parsley, chopped
Butter
Olive Oil
Kitchen Twine
Fresh Asparagus

❂ Cooking Process:

Prepare Anchovy Butter: Mix butter with finely chopped anchovies and parsley.
Butter the Fillets: Spread the anchovy butter generously on one fillet and place the other half on top, creating a sandwich effect with the butter in the middle.
Tie the Fillets: Use kitchen twine to tie the Branzino fillets together securely. Then cut the tied fish into two equal parts.
Pan Fry for Crispy Skin: Heat olive oil in a frying pan. Gently place the tied Branzino and fry until the skin is crispy and golden.
Oven Finish: Transfer the fish to a preheated oven at 380°F and bake for 10 minutes to ensure it’s cooked perfectly throughout.
Sauté Asparagus: Briefly sauté asparagus in the same pan for a simple yet elegant side.
Serve with Elegance: Unveil this beautifully cooked Branzino with its crispy skin and luscious anchovy butter filling, accompanied by the asparagus.
