Chicken Broccoli Rice Casserole (Half Portion – Serves 3–4)

Ingredients:
• 1 can cream of chicken soup (10.5 oz)
• 1 cup heavy cream (or just refill the empty soup can)
• Salt & pepper, to taste
• 1 generous cup rotisserie chicken, shredded
• 1 cup Minute Rice (instant white rice)
• 1 cup water
• ½ bag frozen broccoli florets (about 6 oz)
• 1 cup shredded cheddar cheese (or cheese of choice)

Chicken Broccoli Rice Casserole (Family-Size)

Ingredients:
• 2 cans of cream of chicken soup (10.5 oz each)
• 2 cups heavy cream (or refill both soup cans with cream)
• Salt & pepper, to taste
• 2 generous cups rotisserie chicken, shredded
• 2 cups Minute Rice (instant white rice)
• 2 cups water
• 1 full (12 oz) bag frozen broccoli florets
• 2 cups shredded cheddar cheese (or cheese of choice)

Instructions:
1. Preheat Oven:
Set oven to 375°F (190°C).
2. Mix the Base:
In a large bowl, combine the cream of chicken soup and heavy cream. Season with salt and pepper. Stir until smooth and well mixed.
3. Add Main Ingredients:
Fold in the shredded rotisserie chicken, Minute Rice, and water. Mix until fully combined.
4. Assemble the Casserole:
Pour the mixture into a 9×13 casserole dish. Spread it out evenly.
5. Add Broccoli:
Layer the entire bag of frozen broccoli on top, lightly pressing it into the mixture.

[Music] All righty, y’all. So, our first recipe is going to be a chicken broccoli rice casserole. Now, if you don’t have minute rice or you don’t have, you know, instant rice or whatever you want to use, you can cook up your regular rice. this recipe that I have thought of. You could use cooked rice. You can use the bag rice. You can use whatever kind of starch that you want in there. Okay. You can even do potatoes. You need a bag of broccoli, some rotisserie chicken. I deboned my rotisserie chicken so I can make these videos. Can of cream of chicken soup, some butter, some um cheddar cheese or whatever kind of cheese you want to use. If you don’t like cheddar, use whatever. I’m going to use some heavy cream because it needs to be used, but you could use water or milk or whatever. So, let’s get started. Here’s our ingredients. Let’s get started to cook it. First things first, I want to um you can do this all in your casserole dish, okay? Don’t feel obligated that you need to um do it like I’m doing. I just I have my issues. If you’ve been here for a moment, you kind of know know that I do. I just like to mix everything up in a bowl before I put it in a casserole dish. I don’t know why it’s an Aprilism, but you know, it’s just one of those things. So, I’m just going to take my cream of chicken soup that’s partner near yellow. Wonder if it’s got yellow uh coloring in it. Yep. Beta carotene for color. And then I’m going to just rinse this can. not really rinse it, but I’m going to pour probably leave more in the can than out of the can. But I’m just going to pour the one can of heavy cream and that’s pretty much all I have. So, just the rest of that in here with the soup mixture. And then I want to stir this up thoroughly. I think these cans cut my spatulas. I’m not 100% certain, but I do believe they do. All right, we want to mix this up. And then to this, I want to add in some um salt and pepper. And you don’t have to use a lot of salt, but I am going to go heavy on the pepper because I like pepper. I love to taste the pepper. And I’m not too terribly much salt because remember, we’re using rotisserie chickens. So, just two little pinches of salt. Mix this up together. And then I want to put in some um chicken. I don’t know how much chicken, so I’m making half of a um a casserole. So I’m using this little pan. So I’m going to go with a cup, a nice hefty cup of shredded rotisserie chicken. This is white meat and dark meat. Just There we go. That looks good. Now, if you were doing this for your family, you would use like two cups of the cream of chicken soup and not two cups, two cans. You know, you want to make it for your family. I’m doing a half a batch. So, I will have the full have the half a batch linked in the description box and the full batch linked in the description box. I’m going to spray my pan with some non-stick spray. What is this? Oh, it’s butterflavored. Maybe I don’t need that butter after all. All right. Before I add in that, I also want to add in a cup of rice and then a cup of water. Cuz I think to this it’s a two servings. One cup of rice, one cup of water. So, yes. Whoops. one cup of rice to one cup of water. And that the rice will also cook through the um the milk and the chicken fat that’s you know the juices that’s going to come out of the chicken and all that good stuff. Stir it up. See how that is like all nice and well incorporated and thick. So that’s what I want to do. Then we’re going to add in our broccoli. And I used half a bag that half a bag of broccoli. So, I’m not going to add any butter to it being I use that. I don’t know what what in the world that is. Just April being April, I reckon. And we’re going to clean this out as thoroughly thoroughly as we can. Get all that goodness out of there. Then we’re going to bake this in the oven at 350° for about 30 minutes. Now remember, everything in here is already cooked, y’all. I made a mess. I can’t deal with it. But everything in this um casserole is thorough is is pretty much done. We just want to incorporate it all. Get that rice done. So, 30 minutes and we’re going to cover it with some tinfoil. Let’s see. Perfect. In the oven 350 until it’s done. See you in 30 minutes. Y’all look at that chicken and rice bake. I want to dive right in it, but I know I can’t. So, I got to let it cool. But does that not look delicious, man? Ah, I just want to dig in. All righty, y’all. This is our chicken and rice and broccoli casserole. Sorry, I got a little too close. With some broccoli slaw on the side. Let’s taste it. All right, here goes. That is amazing.
