Sliced 2 large sweet potatoes with a mandolin, tossed with taco seasoning and oil. Baked in a preheated 400° oven in a single layer for 20 min. Flip and bake 10 more minutes or until desired crispness. I topped mine with cheddar, corn cut off the cob, black beans, tomato, red onion, jalapeño, queso fresco, cilantro.
