What is going on with my rice cakes? Just took some out to defrost and after a few seconds noticed these ringworm like circles appearing on them…

Probably just water, is it wet/soft to touch?

I think it’s where water touched. Rice absorbed and swelled a bit. Totally fine IMO

It’s the starches going haywire. Freezing dduk is a great way to preserve them, but it changes starch especially at a molecular level. And when they thaw they come out changed as well. Maybe some freezer burn.
One of the cool things about freezing starches, especially those in rice, is that some of them will turn into resistant starch. Much less digestible (not in a bad way), less calories, and some say good for gut health like dietary fiber.
Ringworm, or other microbial food pathogens don’t appear like that, and especially not after a few seconds, if that’s your concern. A timescale of a few seconds is almost always chemical, not biological.
Personally, Im not a huge fan of defrosted dduk. The texture is always so wrong to me, but ive never had any trouble eating them like this.

You could smell them. If they smell sour, it’s gone bad.
