Orzo Salad with Pecorino, Radicchio, and Chickpeas by Ashley Moore from Cook’s Country, February/March 2016
Whole wheat orzo makes this a perfectly MD salad. I combined the balsamic vinaigrette with the warm orzo to absorb its flavor and then simply added the chopped basil, chickpeas, radicchio, and pecorino. Simple and satisfying.

That sounds delicious! (And you already mentioned using whole wheat orzo, which was going to be my suggestion. It’s one of the pastas that I find tastes very similar to the non-whole wheat once you mix it up in a salad!)
