Ricetta del Gateau di Patate Perfetto e Filante

Ingredienti:

2 kg di patate (preferibilmente a pasta gialla o rossa, per un’ottima consistenza)

2 uova medie

1 bicchiere di latte (circa 150-200 ml, da regolare in base alla consistenza desiderata)

250 g di prosciutto cotto a cubetti

150 g di Parmigiano Reggiano grattugiato (più 40g per spolverizzare)

150 g di provola o mozzarella

80 g di burro (più una noce per la teglia)

Pangrattato q.b. per la teglia e la superficie

Sale q.b. per la cottura delle patate e per l’impasto

Pepe nero macinato fresco q.b.

Noce moscata grattugiata q.b.

Un filo generoso di olio extravergine d’oliva

Perfect and Stringy Potato Gateau Recipe

Ingredients:

2 kg (approx. 4.4 lbs) potatoes (preferably yellow- or red-fleshed, for excellent texture)

2 medium eggs

1 glass of milk (approx. 150-200 ml / 0.6-0.8 cups, adjust according to desired consistency)

250 g (approx. 8.8 oz) cooked ham, diced

150 g (approx. 6.3 oz) grated Parmesan cheese (plus 40g for sprinkling)

150 g (approx. 2.8 oz) provola or mozzarella

80 g (approx. 2.8 oz) butter (plus a knob for the baking dish)

Breadcrumbs q.s. (quantum sufficit/as needed) for the baking dish and surface

Salt q.s. for boiling potatoes and for the mixture

Freshly ground black pepper q.s.

Grated nutmeg q.s.

A generous drizzle of extra virgin olive oil

Good morning everyone, and welcome back to this new video. Today we’re making a great Italian classic: gateu. Delicious, super stringy, and filled with cooked ham. Let’s start by preparing the potatoes. Peel them, rinse them under cold water, and cook them with salt for at least half an hour, until soft. Mash them. Add the butter while still hot. Season with salt , and I suggest tasting to see if it needs more. Now add a glass of milk, the grated Parmesan cheese, and two whole eggs. I’m using a very simple provola. What I don’t recommend is, of course, mozzarella because it tends to release too much water. Give it a good stir and then take a baking dish. This is a baking dish measuring approximately 40 x 50 cm. Pour a drizzle of oil, the breadcrumbs , and then all of our dough inside. Level the surface using a spatula. Then, drizzle with oil and sprinkle with breadcrumbs to create a nice, inviting, and delicious crust. Bake in a preheated oven at 180°C (350°F) for about 40-50 minutes. And voilà, our gâau is ready.     Prova anche la versione che faccio io. È altrettanto buonissima.
    L'impasto con le patate lo faccio uguale tranne le uova che trovo solidificano un po'. In teglia strato di patate due strati di mortadella e uno di mozzarella tritata poi strato di patate sopra spolverata di pangrattato. Infornare e sentirai che buono😂
