On the menu: zucchini lasagna with tofu standing in for ricotta. Very tasty!
I made a few tweaks to the original recipe: I added lemon zest, used a jar of tomato sauce instead of fire-roasted, and went heavier on the cheese (a mix of mozzarella and Pecorino).
I also nearly doubled the quantities. The recipe says 9×13, but it really only makes about 4 servings and is meant for a smaller dish.
Still, it turned out great.
Served with a salad and my favorite vinaigrette.
