If you have the grate with the removable center, can take that out and sear right on the deflector assuming your coals are in the middle.
If I’m going to be searing though it’s generally on a shorter cook like Tri-tip. Don’t use the deflector and move my coals to the vortex while the meat is shocking in the freezer.
I love mine. Set the snake up right and the temps simply do not move for long as you want. I haven’t had the need but a full 2×2 snake would hit 18 hours easy. 3/4 2×2 went 12 and had maybe 1 hour left but I had to leave.

I love mine. I’ve smoked tri-tip, ribs, and chicken so far on it. I really want to try a brisket on it before summer ends.
