I somehow smuggled myself across the Italian border. So, while I’m here, I thought I’d double down and make another pizza abomination just to prove that you can combine pizza with any culture. It will still be delicious. Today, the cultures we’re combining are Italy and Italy. And I’m making a porquetta pizza sandwich. If you’ve never had a porquetta before, first of all, you’re missing out. But it’s basically a whole pork belly flattened out and rubbed down with a flavorful mush. Then, it’s rolled into a log and tied up, which I let dry out in the fridge overnight so that the skin can become super dry, which helps turn the skin into a crispy crackling. The next day, I got it in the oven with a base layer of vegetables and wine. And just listen to this. I’ll let you decide how I did. But the problem with every porquetta sandwich I’ve ever had is that it’s always really quite dry. So to counteract that, I’m making a really nice gravy with the leftover juices. I’m also making something vaguely resembling a salsa verde, but with half of the ingredients missing. I don’t think I’ve ever been successful at buying everything I need when I go to the shops on holiday. Anyway, I got together two little margarita pizzas, which will serve as the top and bottom bun for my sandwich. I laid down my sliced porquetta, gravy, rocket, and my salsa verde. Then I topped it with a second margarita pizza, wrapped it up, and poured myself a nice glass of wine. And can I just say a pizza sandwich is basically just a pre-source for catcher. This is so [ __ ] good.

  1. I'm sorry, but here's my suggestions: Either a spanakopita deep dish (inside filled with the spinach mix and maybe phyllo dough, then topped with more dough) or a pastitsio pizza (stuff the crust with some of the meat sauce and some cheese).

  3. All of these pizza videos have made me think of something. What if you made a big grape, smaller. See, I was thinking about the classic big grape pizza, and thought, “wow, what if you could top this with some kind of small grape?”. And then it struck me. Think about it, think about the possibilities. You could have a big grape, but edible in just one bite! I really think this invention could take off, and cut down on the world’s food waste by lessening grape skin disposal.
