I dry brined for a night. Same routine I do with spatchcock chicken. Simple homemade rub and Lowry’s before putting them on. I did indirect for most of the cook and then put them on the direct side skin down to crisp. Came out perfect. Temp was around 400. I used hickory wood chunks.
Paid like $4 for everything lol.
